Clean Eating Apple Strudel Granola Recipe

Ingredients

  • 2.5 cups oats
  • 1 lovely crisp apple cut into small pieces/cubes
  • 2 tbsp cinnamon
  • 1 tsp nutmeg
  • pinch of ground ginger
  • pinch of salt
  • 1/2 cup crushed walnuts
  • 1/3 cup almond butter or cashew nut butter
  • 1/4 cup date nectar, honey or maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 170 degrees and line your baking tray with baking paper
  2. In a medium size bowl mix all dry ingredients including the apple
  3. In a small bowl whisk together the almond butter and date nectar, then tip it in the bowl with dry ingredients and rub it all in well together making sure the oats mixture is covered entirely
  4. Spread evenly on a baking tray and bake for 15 minutes
  5. After 15 minutes, switch the oven off, but leave the granola in with the oven door slightly ajar. This will help to granola to be even more crispy
