Clean Eating Fish Fingers

Clean Eating Fish Fingers

I am a busy mum of 2 kids each and my kids are huge lovers of fish fingers. They love them that much that I think they would have them all day every day including breakfast. I thought it could be very helpful to share our clean eating fish fingers recipe, not only because it is very simple, but also because it is very tasty and takes literally minutes to make.

Clean Eating Fish Fingers

I like these clean eating fish fingers baked, but if you prefer to have them with a bit of crust on the top feel free to fry them in some good coconut oil. I have used ground almonds, but I imagine ground peanuts would work well too and it would add kind of peanut butter flavour to it too!

Clean Eating Fish Fingers

Make sure you drizzle the fish fingers with some fresh lemon juice and serve them with some sweet potato fries or some freshly made salad. They go very well into a sandwich too with my lemon and dill mayo.

Also if you are on our 3 Month Clean eating challenge this is the perfect post 4pm meal, just omit the oats and use pecorino cheese.
