Clean Eating Lime Pie using only a few ingredients that you all probably have in your cupboard right now. Think oats, almonds, a few avocados, some healthy sweetener and limes. You could use lemon instead of limes too and to make it nut free use seeds for the base. This pie will last in the freezer for up to a month, in the fridge for up to a week. If you are going to freeze it I would suggest you cut it up in slices rather than freezing the whole cake. It will be easier when cutting and serving.

Clean Eating Lime Pie Recipe

Ingredients

  • 1 cup oats
  • 1 cup almonds
  • 1 cup dates (soaked in hot water for 15 minutes and then drained)
  • 2 tbsp coconut oil (not melted)
  • 2 green avocados (make sure they are not brown inside)
  • Juice from 2 limes (or even more if you like it really zesty)
  • 2 tbsp maple syrup or any of your favourite sweetener
  • Handful of desiccated coconut for garnish and some lime slices

Instructions

  1. Start with the base first. In your blender, pop in the oats, almonds, dates and coconut oil and process until the mixture sticks together
  2. Get a cake tin and press the mixture in. Place in the freezer to set
  3. Next, in a bowl put the avocados, juices from 2 lime and maple syrup
  4. Using a whisker or handheld blender, blend until you achieve a completely smooth consistency
  5. Taste and adjust flavours by adding more lime juice or more sweetener
  6. Take the frozen pie base out of the freezer and spread the avocado mixture on the top
  7. Using a fork create lines and sprinkle with desiccated coconut. You can cut some lime slices and place them on one side of the cake
  8. Place back in the freezer to set.
  9. Before serving let it thaw for 15 minutes
